Faciliter la transition vers les contenants réutilisables en restauration : une étude de cas dans une petite municipalité du Québec

Face à l’escalade de la crise mondiale des plastiques, cette étude de cas exploratoire examine les facteurs qui influencent la décision d’adopter un système de réutilisation de contenants alimentaires à emporter par les restaurateurs, cafés et traiteurs d’une petite municipalité (Prévost, Québec, Canada), en amont de son implantation. Une analyse qualitative a été réalisée par le biais d’entretiens et d’observations. Cette recherche met en lumière l’interaction complexe de défis opérationnels (coûts, logistique, hygiène) et de facteurs comportementaux liés à la clientèle (besoin de simplicité et de commodité). L’étude révèle l’importance cruciale d’adapter la proposition de valeur du système aux besoins spécifiques des commerces. Pour surmonter les défis identifiés, nous mettons en évidence la nécessité d’une approche collaborative impliquant activement la municipalité, les restaurateurs et les consommateurs. Cette synergie est essentielle pour développer des solutions sur mesure et pour réduire significativement les déchets d’emballages alimentaires.
